- 3 ½ cups peas
- 1 shallot
- 1 clove garlic cloves
- 2 ½ cups Chicken broth
- freshly ground peppers
- salt
- 1 Tbsp butter
- 1 tsp freshly grated ginger (freshly grated)
- ⅜ cup cream
- 2 Tbsps Crème fraiche
Preparation steps

Peel and finely chop the shallot and garlic. Heat the butter and saute the shallot and garlic, then add the peas and ginger. Stir in the chicken broth and bring to a boil.

Simmer the soup for 6-8 minutes, then add the cream and puree the soup finely. Push through a sieve if you wish. Season to taste with salt and pepper and ladle into bowls or beakers. Add a swirl of crème fraîche to each and serve.
