- 200 grams floury potatoes
- 1 shallot
- 1 garlic clove
- 2 Tbsps sunflower oil
- 300 grams Peas
- 1 sprig mint
- 75 milliliters Whipped cream
- 2 Tbsps Crème fraiche
- salt
- Nutmeg (freshly grated)
- freshly ground peppers

Preparation steps
1.
Peel potatoes and dice. Peel shallot and garlic and chop finely. Heat oil in a pan and saute shallot and garlic. Add peas and potatoes, deglaze pan with broth. Simmer for about 20 minutes or until potatoes are soft. Add mint and puree, strain through a fine sieve.

Add cream and simmer. Add broth or simmer down depending on desired consistency. Add crème fraîche and season with salt, nutmeg and pepper.
3.
Pour into bowls and serve garnished with hot milk foam, if desired.
