1 Tbsp finely chopped Basil
1 Tbsp finely chopped parsley

Preparation steps

1.

Cut the leek lengthwise, rinse off thoroughly, shake dry, trim and cut into thin rings. Peel, wash and dice the potatoes.

In a saucepan, heat 2 tablespoons of oil and cook the vegetables. Pour in the broth and wine and simmer for about 20 minutes over medium heat. Mix in the chopped herbs, puree everything, strain through a sieve if necessary and season with salt, pepper and a pinch of nutmeg.

Peel the onion, cut into thin rings and cook in 2 tablespoons oil in a hot pan until golden brown. Remove to paper towels and drain.

4.

Season the soup again, distribute among bowls, garnish with the fried onions and basil, drizzle with a little olive oil and serve with bread if desired.
