Preparation steps

1.

Rinse the leek, and halve lengthwise. Dry and thinly slice. Blanch for 3-4 minutes in boiling salted water. Remove, rinse under cold water, and drain well. Reserve the cooking liquid.

Melt the butter in a saucepan, then sprinkle with flour, and stir to combine. Gradually incorporate 20 ounces of the leek cooking liquid, stirring often to ensure there are no lumps. Add the cream, then season to taste with salt, pepper, and nutmeg.

3.

Peel and dice the potatoes. Add to the soup, and simmer for 15 minutes. Add the leeks and the chopped parsley, and serve.
