- 1 shallot
- 1 garlic clove
- 1 stalk Leeks
- 250 grams Peas
- 1 Tbsp butter
- 2 Tbsps Pastry flour
- 600 milliliters Chicken broth
- 100 milliliters white wine
- 100 milliliters Whipped cream
- 1 tsp fresh thyme
- ½ bunch Chives
- 1 splash lemon juice
- salt
- freshly ground peppers

Preparation steps

Peel shallot and garlic and chop finely.

Rinse and dry leek, cut into rings. Heat butter in a saucepan and saute shallot, garlic and leek for a few minutes. Sprinkle with flour and saute briefly. Add broth and white wine and simmer, stirring occasionally, for about 15 minutes. Add peas and cream, simmer for 5 more minutes. If thicker consistency is wanted, combine a little flour with water and add to the soup. Rinse chives and cut into 2 cm (approximately 1 inch) rings. Sprinkle soup with thyme, season with salt, pepper and lemon juice. Pour soup into bowls and garnish with chives. If desired, serve with white bread.
