200 milliliters milk
200 milliliters Whipped cream
4 Tbsps sugar
2 eggs
3 egg yolks

Preparation steps

Slit the vanilla bean lengthwise and scrape out the marrow. Place both together with the milk, cream and 2 tablespoons sugar in a saucepan and bring to a boil. Remove from heat. Beat the eggs with the remaining sugar and the egg yolks in a heat-proof bowl placed over a pot of simmering wate. Slowly stir in the hot vanilla cream and stir with the heat-proof spatula from the bowl wall towards the center until the sauce is nice and creamy.

Strain through a sieve and serve hot or cold as desired.
