cup cream
1 Vanilla bean (seeds scraped out)
4 egg yolks
¼ cup sugar
2 Tbsps brown sugar

Preparation steps

Heat the oven to 150°C (130°C in a fan oven), 300°F, gas 2.

Bring the milk to the boil with the cream, vanilla seeds and pod. Beat the egg yolks with the sugar until creamy but not fluffy. Gradually stir in the hot vanilla milk. Strain through a sieve into 4 ramekins.

Place the ramekins in a deep baking tray or roasting tin and pour in enough water to come 2/3 of the way up the side of the ramekins. Bake in the oven for around 45 minutes, longer if necessary.

Take out of the oven and allow to cool, then transfer to the refrigerator to cool completely.
5.
Before serving, sprinkle the dessert with brown sugar and place briefly under a hot grill to caramelise the surface (or use a chef's blowtorch).
