3.333 cups Blackberry
cup sugar
3 tsps lemon juice
1 ⅔ cups water
6 Tbsps cream (48% fat)

Preparation steps

1.
Put the blackberries, sugar, lemon juice and water into a food processor and blend to a puree.
2.
Pour the mixture into a sieve over a bowl and press down with the back of a spoon. Discard the seeds left in the sieve.
3.
Put about half the blackberry puree into another bowl and add the cream and mix lightly.
4.
Spoon a little plain blackberry puree into each ice-lolly mould to reach about 1/4 of the way up. Freeze for about 1 hour, until slightly firm.
5.
Pour the cream mixture on top. Freeze for a further hour, then insert a lolly stick into each mould. Freeze for 5-6 hours until firm.
