- For the pastry
- 1 cup all-purpose flour
- ¼ cup sugar
- ½ cup butter (chopped)
- 1 egg
- For the pudding
- ¼ cup Corn starch
- ½ Vanilla bean (seeds scraped out)
- 1 cup milk
- 2 Tbsps sugar
- powdered sugar
- ¼ cup double cream (whipped)
- Plus
- flour (for the work surface)
- butter (to grease the tartlet tins)
- 12 Blackberry
- mint (to garnish)
Preparation steps

Pile the flour and sugar on the work surface and stir in a pinch of salt. Create a well in the middle and place the butter around the well. Crack the egg into the well and quickly knead into a smooth pastry. Shape into a ball, wrap in cling film and chill for 30 minutes.

Mix the cornflour and the vanilla seeds with 3 tbsp of the milk. Place the remaining milk and the sugar in a pot and bring to the boil. Add the cornflour mixture and allow to thicken, stirring continuously. Transfer to a bowl, dust with icing sugar and leave to cool. Fold in the whipped cream.

Heat the oven to 180°C (160°C in a fan oven), 320°F, gas 4 and grease 12 tartlet tins.

Roll out the pastry thinly on a floured work surface and cut out 12 circles (approx. 4-5 cm in diameter). Place the circles in the prepared tartlet tins and bake for around 12 min. Remove, leave to cool and then remove from the tins.

Fill the tartlets with the pudding and serve garnished with a blackberry and a mint leaf.
