7 Tbsps ground almonds

Preparation steps

1.

Preheat a convection oven to 320°F. Chop the cranberries. In a bowl, beat the eggs, yolks, and sugar until pale yellow and foamy. Stir in the cranberries. In a separate bowl, combine the flour with the baking powder, ground almonds, and 1 pinch of salt. Fold into the egg mixture.

Raise the convection oven temperature to 350°F. Line a baking sheet with parchment paper. Divide the dough in half and shape into long, slightly flattened logs, approximately 3/4 inch high and 2 inches wide. Beat the egg and brush the logs with it.

Place the logs in the oven on the middle rack for 20 minutes. Allow to cool for 10 minutes. Cut the logs into approximately 1/2 inch thick slices. Arrange on the baking sheet and bake until golden brown, about 10-15 minutes. Allow to cool before serving in a bowl.
