Preparation steps

1.

Preheat the oven to 160°C (approximately 325°F). Spread the almonds on a baking sheet and roast for about 10 minutes. Remove from the oven and let cool. Zest the orange. Beat the eggs, egg yolks and sugar until frothy. Mix in the orange zest.

2.

Mix the flour, baking powder and 1 pinch of salt. Fold the flour mixture into the egg mixture. Knead in the almonds. Raise the oven temperature to 180°C (approximately 350°F). Line the baking sheet with parchment paper. With floured hands, divide the dough in half and shape each half into a roll.

3.

Slightly flatten the dough rolls, until they are approximately 2 cm high and 5 cm wide. Beat the egg and brush over the rolls. Bake for approximately 20 minutes. Remove and let cool for about 10 minutes. Cut into 1 cm thick slices.

4.

Arrange the slices on the baking sheet and bake for 10-15 minutes, until golden brown. Let cool and serve.
