Ingredients

For the mayonnaise (ingredients room temp. )
2 egg yolks
1 tsp Mustard
1 unwaxed lemon (juice and finely grated zest)
salt
freshly ground Black pepper
cup extra virgin olive oil
For the seafood
1 lobster
cup dry white wine
cup water
8 King prawn
14 ozs fish fillets (e. g. trout)
Smoked Fish (as desired)
To garnish
Salmon Caviar
Lime wedge

Preparation steps

1.
For the mayonnaise: beat the egg yolks with the mustard, 1 tablespoon lemon juice and a pinch of salt.

Whisk in a few drops of the oil, gradually increasing to a thin stream- but only add enough oil so that it is immediately bound by the egg yolks and becomes a thick, creamy mayonnaise. Add the lemon zest and the remaining juice and season with salt and black pepper. Cover and chill.

Cook the lobster in boiling water for about 10 minutes until bright red. Remove from the water, leave to cool and remove the pincers and the tail. Scoop out the flesh and chop.
4.
Place the wine and water in a pan and bring to a boil. Place the prawns and the fish in a steamer insert and steam for 4-5 minutes. Leave to cool and then peel the prawns.
5.
Arrange all the seafood on serving plates, add the mayonnaise and serve garnished with caviar and lime wedges.
