Preparation steps

1.

Shuck corn. Use a sharp knife to shave kernels off cobs. In a bowl, mix corn with egg yolks, and season with salt and pepper. In another bowl, beat egg white until very stiff. Sprinkle with flour, then fold until egg white.

Heat clarified butter in a pan. In batches, fry corn cakes until golden, about 2 minutes per side. Drain on paper towels. Divide corn cakes among plates.

3.

Arrange watercress and dill on corn cakes and top with smoked salmon. Garnish each serving with a dollop of crème fraîche, and top with salmon roe.
