- 1 small onion
- 1 garlic clove
- 4 ozs button Mushroom
- 2 Tbsps olive oil
- ¼ lb Ground beef
- salt
- peppers
- 1 tsp dried oregano
- 8 ozs strained tomato ((caned )
- 1 ½ cups Vegetable broth
- 2 ozs cream cheese
- 1 yellow Bell pepper
- 1 handful Arugula
- 4 tsps Parmesan

Preparation steps
Peel and chop the onion and garlic. Clean and quarter the mushrooms.
Heat 1 tablespoon of oil in a pot. Brown the meat in it at high heat for 3-4 minutes. Add onion, garlic and mushrooms and saute for 5 minutes over medium heat. Season with salt, pepper and oregano.
Add tomatoes and stock, stir in cream cheese and simmer for 10 minutes.
In the meantime, dice the pepper removing the seeds. Wash arugula, spin dry, chop very finely, mix with remaining oil and season with salt and pepper. Slice the parmesan.
Add diced peppers to the soup and stir in. Put pizza soup into a small bowl, drizzle with rocket oil and add parmesan.
