- 2 Tbsps Peanut oil
- 4 cups fresh Asparagus (trimmed and cut into pieces)
- 3 carrots (peeled; trimmed and thinly sliced)
- 1 large, red Bell pepper (rinsed; trimmed and cut into strips)
- 1 large, yellow Bell pepper (rinsed; trimmed and cut into strips)
- 1 large yellow onion (peeled and sliced)
- 2 cups sliced shiitake mushrooms
- 2 tsps minced ginger
- 1 tsp minced garlic cloves
- 1 cup fresh Bean sprout
- 3 Tbsps low-sodium soy sauce
- 1 Tbsp toasted sesame oil (to taste)

Preparation steps
1.
Heat peanut oil in a large skillet or wok over medium-high heat until very hot, but not smoking. Add asparagus, carrots, bell peppers, onion, shiitake mushrooms, ginger and garlic and stir-fry for 4 to 5 minutes, or until vegetables are tender crisp.

Stir in bean sprouts and soy sauce and cook for 30 seconds. Remove from heat and stir in toasted sesame oil. Serve over rice, if desired.
