400 grams Stockfish
1 kilogram potatoes
2 onions
vegetable oil (for frying)
3 eggs
2 sprigs chopped parsley
50 milliliters olive oil
100 milliliters fish stock

Preparation steps

1.

Soak the cod in clean water the previous evening. Change the water in the morning and soak the fish for another 6 hours.

Cook the cod in water for 15 minutes and then remove the skin and bones. Wrap in a kitchen towel and pat the fish thoroughly. Cut into bite-sized pieces or strips.

Peel the potatoes and cut into fine strips, 4-5 cm long (approximately 1 1/2 - 2 inches). Blanch for 1 minutes, drain well and fry in hot oil. Set aside.

Peel the onions and cut into narrow strips. Beat the eggs with a little parsley.

Pour the olive oil into a pot. Add the onion, parsley, potatoes and cod. Season with salt and simmer with the lid on. Pour in a little fish stock if necessary. 

Finally, add the eggs and stir constantly. The eggs pieces should remain loose and small.

4.

Spoon portions into a small bowl and then tip up onto plates.

Bake in a preheated oven at 200°C (approximately 400ºF) for 10-15 minutes.

Serve seasoned with freshly ground pepper.
