- 8 wooden Skewer (soaked in water for 30 minutes)
- 1 ½ cups white rice
- 2 green Bell pepper (cut into chunks)
- 3 cups chicken sausage (cut into 1-inch pieces)
- 1 large Red onion (cut into chunks)
- 3 Tbsps extra virgin olive oil (divided)
- kosher salt (to taste)
- freshly ground Black pepper (to taste)
- ¼ cup fresh cilantro (finely chopped)

Preparation steps
1.
Preheat a grill or grill pan to medium high heat. Prepare the rice according to package instructions.

Meanwhile, toss the bell peppers, sausage, and onion, in a bowl with 1 tablespoon olive oil; season with salt and pepper. Thread onto the skewers, alternating the sausage and vegetables. Grill, turning, until the vegetables are slightly softened and the sausage is cooked through and begins to brown, about 10 to 15 minutes.

Fluff the rice with a fork. Season to taste with salt and pepper and sprinkle with fresh cilantro.
4.
Spoon rice onto serving plates and top with sausage kebabs. Serve.
