- For the pesto
- 1 bunch Basil
- salt
- 1 garlic clove
- 150 milliliters olive oil
- In addition
- Smoked salmon
- For the cod
- 4 Cod
- 400 milliliters fish stock
- 60 grams butter
- 40 grams White bread crumbs
- 30 grams almonds
- 1 tsp parsley
- salt
- freshly ground peppers
- 1 splash lemon juice
- Bakers twine
Preparation steps

For the fish: Rinse fish fillets and pat dry. Season lightly with salt.
Mix butter with breadcrumbs, ground almonds and parsley and season with salt, pepper and lemon juice.

Roll up fish fillets and tie with a kitchen twine. Spread nut mixture on top. Bring fish stock to a boil in a shallow baking pan and arrange fish rolls in the pan. Roast under a hot broiler for about 5-6 minutes, watching carefully.

For the pesto: Combine all ingredients in a blender and puree. Add more oil, if necessary, to reach creamy consistency.
4.
Arrange finished fsh medallions with pesto sauce on plates and serve garnished with fresh basil and smoked salmon.
