- 3 Tbsps Pine nuts (toasted)
- 3 garlic cloves
- 2 tsps Sea salt
- 40 grams Parmesan
- 40 grams pecorino romano
- 150 milliliters olive oil
- freshly ground peppers

Preparation steps

With an immersion blender, puree basil, pine nuts, garlic and oil. Stir in sea salt and cheese and season with pepper.

Alternatively, crush basil, pine nuts and garlic in a large mortar. Gradually mix in sea salt and cheese and add oil in spoonfuls and season with pepper. Place pesto in a glass jar and add olive oil to cover top and seal. Keeps in refrigerator for 2-3 weeks.
