- 600 grams Cod
- 1 onion
- 4 slices Toast
- 5 sprigs flat parsley
- 4 Tbsps breadcrumbs
- 1 egg
- 1 Tbsp lemon juice
- salt
- freshly ground peppers
- 3 Tbsps Canola oil
- Lettuce (for garnish)
- Tomatoes (for garnish)
Preparation steps

Rinse the cod fillet, pat dry with paper towels and chop. Peel the onion and chop. Soak the toast in a little water. Rinse the parsley, shake dry and chop the leaves.

Puree the fish along with the chopped onion in a blender. Mix with expressed toast, breadcrumbs, egg, chopped parsley and lemon juice to a dough. Season with salt and pepper. Form the dough with damp hands into small patties.

Heat the canola oil in a nonstick pan and cook the meatballs in it on each side 7-8 minutes. Drain on absorbent paper. Arrange on plates and garnish with lettuce leaves and tomato wedges.
