Coconut Rice with Melon
- 1 can Coconut milk (400 ml)
- 125 grams Arborio rice
- 200 grams Whipped cream
- 2 Tbsps sugar
- 1 honeydew melon
- 1 Lime
- 1 Tbsp honey
- mint (for garnishing)

Combine rice with coconut milk in a saucepan, bring to a boil and simmer for about 20 minutes, uncovered, stirring occasionally. Turn off heat, cover and leave rice to plump up for about 30 minutes. Cool.
Halve melon, remove seeds and fibers, remove skin and cut into wedges.
Rinse lime in hot water and dry. Cut lime peel into very thin strips. Squeeze lime juice. Combine honey, lime juice and lime stripes. Drizzle over melon wedges and let rest for a little.
Whip cream with sugar and fold into coconut rice.
Arrange coconut rice with melon wedges on plates and serve garnished with mint and coconut shavings.
