- 1 Tbsp Mango powder
- 250 milliliters Coconut milk
- 50 sugar
- salt
- 2 ripe Mangoes
- melted butter
- 1 Lime

Preparation steps

In a colander, rinse rice under cold running water. Combine rice, coconut milk, 250 ml (approximately 1 cup) water in a pot. Stir in a pinch of salt and mango powder. Bring to a boil. Reduce heat to low. Cover and simmer, stirring occasionally, about 20 minutes. Stir in sugar.

Peel mangos and cut fruit away from pit into 1-cm (approximately 1/2-inch) thick slices. Brush mango slices with a little melted butter. Grill on both sides, 2-3 minutes.

Divide coconut rice among bowls, top with grilled mango slices, and serve with lime wedges.
