- 2 egg whites
- 1 pinch salt
- 100 grams Orange blossom honey
- 120 grams Shredded coconut
- 2 tsps finely grated Orange peel
- 30 grams Pastry flour
- 30 baking Wafer about 4 cm (approximately 1.5 inches) in diameter

Preparation steps

Pit the dates and chop finely. Beat the egg whites with a pinch of salt until soft peaks form. Gradually add the honey and continue beating until stiff and glossy.

Fold the shredded coconut, chopped dates, grated orange peel and pastry flour into the egg whites. Place the baking wafers onto a baking sheet lined with parchment paper. Spoon the egg white mixture onto the baking wafers by the teaspoonful and bake in an oven preheated to 180°C (approximately 350°F) for 10-12 minutes, until golden brown.
