- 250 grams green Asparagus
- 250 grams white Asparagus
- 150 grams Celeriac
- 1 onion
- 3 sprigs Dill
- 4 sprigs glossy parsley
- 3 sprigs red Basil
- 6 small Vine tomatoes
- 3 Tbsps olive oil
- 4 Star anise
- 2 tsps brown sugar
- 200 milliliters dry white wine
- 800 milliliters Vegetable broth
- 4 tsps Pesto
- salt
- freshly ground peppers

Preparation steps
1.
Rinse the asparagus, peel the bottom third, cut off the top 2 cm (approximately 3/4 inch) and chop. Peel and dice the celeriac and the onion. Rinse the herbs and pluck the leaves from the stems. Rinse the tomatoes and cut into wedges.

Heat the olive oil in a saucepan. Fry the onion, anise and celeriac, add the brown sugar and caramelize while stirring. Pour in the white wine and vegetable stock. Add the asparagus and cook over medium heat for about 10 minutes.
3.
Add the herbs and the tomatoes. Cook for about 5 minutes over low heat.
Stir in the pesto and season with salt and pepper before serving.
