Classic Salmon Canapes

Mix the flours together with the baking powder. Dissolve the yeast in the warmed milk and add it to the flour with the salt and egg yolk. Set aside in a warm place for about 45 minutes.
Lightly whisk the egg white and fold into the batter with a tablespoon of the melted butter.
Heat a little of the remaining butter in a frying pan and drop on spoonfuls of the batter. Cook for 1-2 minutes on each side or until golden brown. Repeat until the batter is used up.
Spoon a little creme fraiche onto each blini, top with smoked salmon and garnish with dill sprigs and lemon wedges.
