2 Tbsps sunflower oil
28 ozs onions (approx. 4-5), cut into thin wedges
1 tsp sugar
3 ½ cups Meat stock
cup dry white wine
2 cloves garlic cloves (crushed)
1 tsp lemon juice
1 Baguette (thinly sliced)
1 cup Gruyere (grated)

Preparation steps

Heat the oil in a pot and slowly fry the onions for 10-15 minutes until soft. Season with sugar, salt and ground white pepper and braise with the lid on for another 10 minutes until the onions are brown.

Add the stock and the wine, bring to the boil and simmer for another 15 minutes. Add the garlic and season with lemon juice, salt and ground white pepper.

Preheat the grill.

Transfer the soup to four oven-proof bowls or dishes and top each one with 3-4 slices of baguette. Add the cheese and grill for 4 - 5 minutes until the cheese turns brown. Remove from the grill and serve immediately.
