Preparation steps
1.
Mix the eggs with a fork and season with salt and pepper.
2.
Heat the butter in a 15 cm/6 " frying pan on a high heat until foaming then pour in the eggs. Cook for 5 seconds then very gently stir the eggs, shaking the pan as you do so, until they are just set. Serve immediately.
