Preparation steps
1.
Cut the tomatoes in half, scrape out the seeds and roughly chop the flesh.
2.
Reserve a few basil leaves for garnish then chop the rest of the leaves.
3.
Mix the tomatoes with the oil and basil and season with salt and pepper.
4.
Toast or grill the slices of bread and serve topped with the tomato mixture. Garnish with the reserved basil leaves.
