500 grams Beef fillet
½ lemon (juiced)
1 tsp Truffle oil
3 Tbsps olive oil
salt
1 bunch Arugula
freshly ground white peppers
60 grams freshly grated Parmesan

Preparation steps

1.

Rinse the beef and pat dry. Trim and wrap tightly in plastic wrap. Wrap in aluminum foil and place in the freezer for 1.5 hours.

Mix the lemon juice with some salt, and incorporate the oil completely.

Rinse and dry the arugula.

4.

Remove the beef from the plastic wrap. Using a slicer, slice thinly. Arrange on a plates, with the slices overlapping. Drizzle with the marinade. Top with freshly ground pepper, and garnish with the parmesan and arugula.
