- 1 duck leg (2 kg, ready to cook)
- Sea salt
- freshly ground peppers
- 1 organic Orange
- 1 organic Grapefruit
- 2 organic Clementine
- 2 lemons
- 3 pcs Pickled ginger (in syrup)
- 2 Tbsps honey
- 3 Star anise
- 250 milliliters Orange juice

Preparation steps

Preheat the oven to 180°C (approximately 350°F). Rinse duck inside and out, pat dry and season with salt and pepper. Divide duck into quarters. Rinse orange grapefruit and clementine with hot water and cut in half. Arrange duck pieces and citrus fruits in a large roasting pan.

In a saucepan, mix ginger with 2 teaspoons of ginger syrup, honey, star anise and orange juice and simmer over medium heat. Then pour orange mixture over duck pieces in the roasting pan and bake for about 1 hour in the preheated oven until golden brown. Baste duck several times during cooking with pan juices. Remove fruit before serving. To serve, arrange duck pieces on a large platter and drizzle with roasting juices.
