- For the muffins
- ⅓ cup butter (melted)
- 1 egg (lightly beaten)
- ¾ cup plain Yogurt
- 1 lemon (juice and finely grated zest)
- 1 ½ cups all-purpose flour
- 1 Tbsp Baking powder
- ⅔ cup sugar
- For the frosting
- 2 cups powdered sugar
- 3 Tbsps lemon juice
- 1 tsp hot water

1 Cutting board, 1 Small knife, 2 Bowls, 1 Wooden spoon, 1 Pot, 1 Whisk, 1 Springform pan (24 cm Ø), 1 Parchment paper, 1 Wire rack, 1 Tea strainer, 1 Measuring cups, 1 Tablespoon, 1 Teaspoon
Preparation steps
1.
For the muffins: heat the oven to 180C, 350F, gas 4. Grease 10 holes of a muffin tin.
2.
Combine the butter, egg, yoghurt, lemon juice and zest in a mixing bowl. Sift in the flour, baking powder and sugar.
3.
Spoon the mixture into the tins, almost to the top. Bake for 25 minutes until golden and risen. Leave in the tins for 5 minutes, then place on a wire rack to cool.
4.
For the frosting: sift the confectioners’ sugar into a bowl and gradually stir in the lemon juice and water until smooth.
5.
Spoon over the muffins, allowing it to run down the sides. Leave to set.
