- 4 duck legs (about 180-200 grams or 7 ounces)
- salt
- freshly ground peppers
- 300 milliliters Port wine
- 100 milliliters Orange juice
- 1 Cinnamon stick
- ¼ tsp Cardamom
- 1 sliced Vanilla bean
- 1 sprig rosemary
- 1 sprig thyme
- 1 Tbsp Orange peel
- 150 grams Tête de Moine cheese
Preparation steps

Preheat the oven to 220°C (approximately 430°F).
Rinse duck, pat dry and season both sides with salt and pepper. Fry, skin-side down, in a hot, dry pan until golden brown. Flip and cook for 1 minute more. Remove and place on a baking sheet lined with parchment paper. Roast until pink, about 10-15 minutes.

Deglaze pan drippings with port wine and orange juice, add spices, herbs and zest and simmer over medium heat for 10-15 minutes.
Remove duck from oven. Let rest briefly and slice. Drizzle with sauce and serve with cheese.
