- 1 Tbsp olive oil
- 4 Leeks (rinsed well and chopped)
- kosher salt (to taste)
- freshly ground Black pepper (to taste)
- 16 ozs potatoes (peeled and chopped)
- 9 cups vegetable stock
- 4 Tbsps heavy cream
Preparation steps

In a large soup pot, heat the olive oil. Add the leeks and season with salt and pepper. Saute leeks on medium heat until soft, about 10 minutes.

Add the potatoes and the vegetable stock; cover and bring to a boil. Reduce heat to low and simmer for about 15 minutes or until potatoes are fork tender.
3.
Turn off the heat and slowly stir in the cream. Adjust salt and pepper as desired and serve.
