0.333 cup black Olives (pitted and finely chopped)

Preparation steps

1.
Heat 3 tbsp oil in a pan and gently fry the onion until soft.
2.
Add the garlic, cook for 1 minute then add the mushrooms and cook for 10 minutes. Stir in the olives and season with salt and pepper.
3.
Brush the toasted bread with the remaining oil, spoon over the mushroom mixture and garnish with the chopped parsley.
