- 4 egg whites
- 1 tsp lemon juice
- 1 cup sugar
- 1 Tbsp freshly brewed mocha coffee (cold)
- 2 cups Almond flour
- 1 Tbsp Mocha powder
- 1 ⅓ cups dark Chocolate couverture
- ⅓ cup Dark chocolate (chopped)
- ½ cup Pistachio (chopped)

Preparation steps
1.
Preheat a fan oven to 130°C (110° fan) | 250F | gas 1/2.
2.
Whisk the egg whites and the lemon juice until stiff, then slowly add the sugar. Continue whisking until stiff and glossy.
3.
Slowly pour in the mocha and carefully fold in the almonds and mocha powder.
4.
Put half of the mixture into a piping bag with a 4 cm fluted nozzle. Make small blobs on a baking tray lined with baking paper. Now put the remaining mixture into the piping bag and pipe a small dome on the top of the meringue base, using a round nozzle.
5.
Bake in the preheated oven for 30-40 minutes. Remove from the oven and leave to cool.
6.
Melt the couverture and dip the meringues. Allow to dry briefly, then sprinkle with a little of the chopped chocolate and pistachios. Leave to set and enjoy.
