Preparation steps

1.

Chocolate grind finely. Melt butter in a saucepan, stir in flour and fry. Deglaze with milk and boil while stirring. Stir in chocolate and 2/3 sugar and remove pan from heat.

Whisk egg yolks and add to chocolate mixture. Beat egg whites and remaining sugar until very stiff. Stir 3 tablespoons of egg whites into chocolate then carefully mix in remaining egg whites.

Pour mixture into 6 buttered, sugar-lined ramekins and bake in oven at 175°C (approximately 350°F) for 30 minutes. Before serving add a dollop of apricot jam and semi-whipped cream to each chocolate souffle.
