60 grams Dark couverture chocolate (min. 60% cocoa)
50 grams softened butter
3 eggs
50 grams sugar
1 Tbsp Pastry flour

Preparation steps

1.

Butter ramekins and sprinkle with flour. 

2.

Chop chocolate coarsely and melt in a bowl over hot water bath, cool slightly. Add butter and mix well.

Separate eggs. Whisk egg yolks with half of sugar over hot water bath until creamy, remove from heat. Cool slightly and add chocolate butter. Beat egg whites with remaining sugar until stiff, fold into chocolate mixture, sprinkle with flour and gently fold flour into the mixture. Pour mixture into ramekins and bake in preheated oven at 200°C (approximately 400°F) for about 15 minutes. Garnish with grated chocolate and dust with powdered sugar. Serve immediately.
