- 50 grams butter
- 50 grams Pastry flour
- 300 milliliters milk
- 50 grams sugar
- 3 egg yolks
- 5 egg whites
- powdered sugar (for the dishes)

Preparation steps

Finely grate the chocolate. Melt the butter in a saucepan, stir in flour, and saute. Deglaze with the milk and bring to a boil while stirring. Stir in the chocolate and 2/3 sugar and remove the pan from the heat. While whisking the egg yolks, stir in the chocolate mixture. Beat the egg whites until very stiff, sprinkling in the remaining sugar. Stir 3 tablespoons of egg whites into the chocolate mixture, and then carefully fold in the remaining egg whites. Butter and sugar the souffle dishes and pour in the chocoalte mixture. Bake in an oven preheated to 175°C (approximately 350°F) for 30 minutes. During baking, do not open the oven!

Before serving, sprinkle with powdered sugar.
