50 grams butter
50 grams Pastry flour
300 milliliters milk
50 grams sugar
3 egg yolks
4 egg whites
powdered sugar (for ramekins)

Preparation steps

Grind chocolate finely. Melt butter in a saucepan, add flour and cook until lightly brown. Deglaze pan with milk and bring to a boil, stirring. Add chocolate and 2/3 of sugar, remove pan from heat. Whisk egg yolks and add to chocolate mixture. Beat egg whites until very stiff, gradually add remaining sugar, beating constantly. Fold in 3 tablespoons of egg whites into chocolate mixture, fold in the rest carefully. Pour batter into buttered and sprinkled with sugar ramekins and bake in preheated oven at 175°C (approximately 350°F) for about 30 minutes.
