- For the pears
- 2 ½ cups dry white wine
- 5 Tbsps sugar
- 1 stick cinnamon
- 3 cloves
- 1 Star anise
- 4 Pear (e. g. Williams Christ, peeled and cored from beneath)
- For the cake
- butter (for the ramekins)
- ½ cup plain Chocolate (for cooking)
- ⅓ cup softened butter
- ⅓ cup superfine caster sugar
- 2 egg yolks
- 1 egg
- ½ cup self-rising flour (sifted)

- powdered sugar (for dusting)

Preparation steps
1.
Heat the wine in a saucepan with the sugar and spices; do not boil. Add the pears and simmer for approx. 5 minutes. Take off the heat and leave to cool in the sauce. Once cool, take the pears out of the sauce and allow the sauce to drip off.

Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6. Grease 4 ramekins or individual oven-proof dishes with butter.

Melt the chocolate in a bowl over hot, but not boiling water. Beat the softened butter with the sugar until fluffy. Add the egg yolks one at a time, followed by the egg, alternating with the flour. Beat after each addition. Stir in the melted chocolate and spoon into the ramekins. Place one pear in each ramekin and bake for approx. 12-15 minutes.
4.
Take out of the oven, dust with icing sugar and serve.
