Preparation steps

1.

Rinse the oranges with hot water and wipe dry. Cut off the two ends of the oranges, cut the oranges into quarters and remove the pulp so that nothing remains on the orange peels. Cut the peels into strips, put in a pan, cover with cold water, bring to a boil and strain. Repeat this process two more times. In a pot, pour 250 ml (approximately 1 cup) of water, add the orange strips and sugar and bring to a boil. Simmer for about 30 minutes or until the liquid has evaporated. Cool on a wire rack and let the peel strips dry.

2.

Melt the chocolate in a bain merie and dip each orange peel half way in into the chocolate. Place on parchment paper and let cool.
