2 Tbsps melted butter
1 Tbsp water
5 ozs plain Dark chocolate (70% cocoa solids)

Preparation steps

1.
Pulse the dates, apricots and figs in a food processor.
2.
Add the melted butter and a little water to bring them together.
3.
Roll pieces of the mixture into small balls and place on non-stick baking paper for at least 2 hours to dry.
4.
Put the chocolate in a heatproof bowl over a pan of simmering (not boiling) water until the chocolate has melted. Stir until smooth and set aside to cool slightly and thicken.
5.
Using a skewer or fork, dip the balls into the chocolate until coated. Place on non-stick baking paper. Sprinkle with a little sugar and leave to set.
