- 1 Sponge cake base (or biscuit)

- 125 grams butter
- 150 grams powdered sugar
- 100 grams Cocoa
- 1 egg
- 2 Tbsps Rum
- 1 packet Vanilla sugar
- for the garnish
- 200 grams white Couverture
- 2 Tbsps butter
- 100 grams Hazelnut brittle
- 50 grams Dark couverture chocolate
- 12 Chocolate truffle
Preparation steps

Beat the butter until frothy. Stir in the egg, powdered sugar, cocoa, rum and vanilla sugar. Cut the cake horizontally and spread the cream in between. Melt the white chocolate with the butter over hot, but not boiling, water. Cover the cake and sprinkle with the hazelnut.

Melt the dark chocolate over the hot water bath. Place in a pastry bag and decorate the cake. Decorate with the truffles. Let dry for at least 1/2 hour then chill for 2 hours. Cut into slices and serve.
