- ⅓ cup butter
- ½ cup caster sugar
- ⅓ cup light brown sugar
- 1 egg
- 1 tsp vanilla extract
- ⅔ cup plain flour
- 1 tsp Baking powder
- salt
- ¾ cup Chocolate chip
- ¾ cup Shredded coconut

Preparation steps
1.
Heat the oven to 180C|350F|gas mark 4. Grease 2 baking trays.
2.
Cream the butter and both sugars until soft and light.
3.
Beat in the egg and vanilla.
4.
Sift over the flour, baking powder and salt and beat well until combined. Stir in the chocolate chips and coconut.
5.
Drop teaspoons of the mixture onto the baking trays, spacing them 5 cm|2 inches apart. Flatten lightly with a wet fork.
6.
Bake for 10-12 minutes until golden. Carefully place the biscuits on a wire rack to cool completely.
