Choc Chip Muffins
Can be frozen.
Heat the oven to 350°F (180°C).
Chop the chocolate into small pieces. Melt the butter in a pan. Whisk the milk, egg, sour cream and sugar using an electric mixer. Place the flour, cornstarch, baking powder and salt in a bowl and mix until combined. Now pour in the milk - egg mixture, the melted butter and the chocolate pieces and stir until smooth.
Place the baking cups into the cupcake tin and pour in the cake batter, just about filling each cup. Bake on the middle shelf of the oven for about 30 minutes. Let cool in the cupcake tin for 10 minutes, then remove and place on a wire rack to cool completely.
