- 2 Tbsps Nut oil (or sunflower oil)
- 1 small Pineapple (top cut off, cored with the flesh reserved and cubed)
- 1 cup white rice (cooked as per package instructions)
- ⅓ cup frozen peas
- ½ Chinese sausage (Lap Cheong)
- 2 eggs (beaten)
- salt
- peppers

Preparation steps
1.
In a large wok, heat the oil to hot and stir-fry the sausage and peas for 2-3 minutes.
2.
Add the beaten eggs and continue to cook for a further 2-3 minutes, stirring continuously.
3.
Add the chunks of pineapple and the cooked rice and mix to combine well.
4.
Season with salt and pepper and serve in the cored pineapple.
