- 16 ozs boneless, skinless Chicken breasts (halves)
- cayenne pepper (to taste)
- 1 Tbsp Corn starch
- 2 tsps toasted sesame oil
- 1 red Bell pepper (rinsed; trimmed and diced)
- 3 scallions (rinsed; trimmed and thinly sliced; divided)
- 2 cloves garlic cloves (peeled and minced)
- freshly grated ginger (about 1-inch)
- crushed Red pepper flakes to taste (1/2 teaspoon to 1 1/4 teaspoons)
- 2 Tbsps Rice wine vinegar
- 2 Tbsps soy sauce
- 2 tsps granulated sugar
- ½ cup Peanuts
- 4 cups cooked Rice (hot)

Preparation steps
1.
Rinse the chicken under cold running water and pat completely dry with paper towels. Season with lightly with cayenne pepper and cut into bite-size pieces. Toss chicken pieces in cornstarch.
2.
In a wok or skillet, heat the sesame oil over medium-high heat until very hot. Add the chicken and stir-fry for about 5 to 7 minutes. Remove chicken chicken from wok.
3.
Add the red peppers, all but 1 tablespoon of the scallions, garlic, ginger, and crushed red pepper flakes, stir-fry for 2 to 3 minutes. Remove from heat.
4.
In a small bowl, combine rice wine vinegar, soy sauce, and sugar. Whisk to blend.
5.
Add sauce and chicken to skillet. Stir until chicken pieces are well coated. Stir in the peanuts. Heat thoroughly, stirring several times. Garnish with remaining scallions before serving.
6.
Serve with hot rice.
