- 2 Chicken breasts
- 2 scallions
- 1 Tbsp vegetable oil
- 2 large carrots
- 500 grams button Mushroom
- 1 ⅕ liters Chicken broth
- 150 grams Udon Noodle
- 3 Tbsps dark soy sauce
- 2 Tbsps Fish sauce
- freshly ground peppers

Preparation steps

Cut the chicken breast into strips. Rinse, trim and cut the scallions into rings. Peel the carrot and cut diagonally into thin slices, wipe the mushrooms with a paper towel and cut into slices. Heat the oil, saute the chicken, add the onions and saute briefly, then add the remaining vegetables and sauté briefly. Pour in broth, bring to a boil and simmer for 7-10 minutes.

Meanwhile cook the pasta according to package directions, drain and add to the soup. Season with soy sauce, fish sauce and pepper to taste, pour into bowls and serve hot.
