- 16 ozs cooked Lobster meat cut into 2 cm (2") pieces
- 3 tsps Corn starch
- 2 tsps fresh ginger
- 5 scallions (finely chopped)
- 2 Tbsps soy sauce
- 1 tsp sesame oil
- 1 egg white
- 4 slices white Bread (crusts removed)
- 1 cup rapeseed oil
- 2 eggs (beaten)
- To serve
- soy sauce

Preparation steps
1.
Toss the lobster meat in the cornflour.
2.
Put the lobster, ginger, spring onions, soy sauce, sesame oil and egg white into a blender and blend to a coarse paste.
3.
Spread the bread slices with the lobster paste, pressing the paste onto the bread. Cut each slice diagonally into 4 triangles.
4.
Heat the rapeseed oil in a deep pan.
5.
Dip the triangles in the beaten egg and fry in the oil, lobster side down, until golden brown.
6.
Drain on kitchen paper and serve warm with a bowl of soy sauce for dipping.
