- For the muffins
- 2 ½ cups all-purpose flour
- 1 cup light brown sugar
- 2 tsps Baking powder
- 2 tsps ground ginger
- ½ tsp ground cinnamon
- ½ tsp ground mixed spice
- ¼ tsp ground cloves
- 2 eggs
- 7 Tbsps clear honey
- ½ cup butter (melted)
- ½ cup hot water
- 2 Tbsps Cognac
- For the icing
- 2 ½ cups powdered sugar
- 1 Tbsp lemon juice
- 1 Tbsp water
- To decorate
- crystallized ginger (pieces)

Preparation steps
1.
For the muffins: heat the oven to 180°C (160° fan) 350°F gas 4. Place paper cases in a 12 hole muffin tin.
2.
Sift the flour, sugar, baking powder and spices into a mixing bowl.
3.
Beat together the eggs, honey and butter until smooth. Stir into the dry ingredients.

Add the water and cognac to give a soft droppping consistency and stir well until combined. If the mixture is too stiff, add a little more hot water.
5.
Spoon into the paper cases and bake for 20-25 minutes until golden and a skewer inserted into the centre comes out clean. Leave in the tins for 5 minutes, then place on a wire rack to cool completely.
6.
For the icing: sift the icing sugar into a bowl and stir in the lemon juice. Beat in just enough water to give a thick coating consistency.
7.
Spread the icing on top of the muffins and decorate with the ginger pieces.
