For the cupcakes
1 ½ cups gluten-free all purpose flour
½ cup caster sugar
2 tsps gluten-free Baking powder
1 pinch salt
1 egg (beaten)
cup milk (more if needed)
¼ cup sunflower oil
1 tsp vanilla extract
To decorate
powdered sugar
1 cup white Sugar paste
4 Tbsps Apricot Jam
1 Tbsp hot water
12 white gluten-free marshmallows
1 Tbsp Shredded coconut
2 tubes colored buttercream (for decorating a cake)
edible, silver Bauble
red gluten-free Candy

Preparation steps

1.
For the cupcakes: heat the oven to 160°C (140° fan) 325°F gas 3. Place paper cases in a 12 hole bun tin.

Put all the ingredients into a mixing bowl and whisk with an electric whisk until well combined. Alternatively beat well with a wooden spoon. Add more milk if the mixture is too stiff, to give a soft dropping consistency.

Spoon the mixture into the paper cases and bake for 20-25 minutes until golden and springy to the touch. Remove from the tin and place on a wire rack to cool completely.
4.
To decorate: dust a work surface with icing sugar and roll out the sugarpaste about 5mm|¼" thick. Cut out 12 circles using a small pastry cutter, a little smaller than the top of the cakes.

Mix the apricot jam with the hot water and brush over the surface of the cakes and stick the circles of fondant on top.
6.
Attach the marshmallows for the snowmens' heads, with a little jam.
7.
Roll the remaining sugarpaste into small balls for the' noses'. Brush lightly with jam and roll in the coconut. Attach to the faces using a dab of jam.
8.
Pipe a little black decorating icing for the 'eyes' and red decorating icing for the 'mouths'. Using a dab of jam, stick on the edible silver baubles for buttons. Wrap the strawberry belts around the marshmallows for scarves.
